i think they did that to Edwards hair because thats what people do for a different year,they almost always change their hairstyles,probably trying to fit in with the human world so they would not look out of place.

I think he looks the best in Breaking Dawn , especially his hair they finally got it to the right shade according to the book. Hair cut wise I think it fits better as well.
