In my opinion i think you have to look at it like humans would look at the difference between a soul mate and a random guy ( or girl) you would go on a date with, All blood has a flavour and i believe that the flavour differs because of people's personality, maybe more than that maybe it differ's because everyone soul is different.
Bella is Edwards soulmate and thus her blood smells and also tastes far more potent than any other because Edward loves so much about bella. Everything about her is beautiful and kind and good as far a Edward is concerned they are perfectly matched, ( or i suppose they would be if Edward was in fact human). Although this part about the blood being more alluring because they are perfectly matched is a theory i still think that the reason for the different flavours of blood is just because everybody is different. What i did want to say though is that everybody interprates different parts in the books differently so maybe others have different theories, but isn't that part of the fun lol. hope some of this helped xx nicola simpson
